Ingredients :
Carrot - 1 Large - finely grated
Sago - 2 tablespoons
Milk - 2 cups
Sugar - 1/2 cup or according to your taste
Cashews - 5
Cardamom - 2 - nicely crushed
Clarified Butter / Ghee - 1 tablespoon
Method :
Heat clarified butter in a thick bottomed pan, fry cashews and keep them aside. Fry the grated carrots in the same pan for few minutes in low flame. Now add milk, sugar and crushed cardamom, cook on low flame for 10 minutes. In the mean time , soak sago for 10 minutes and microwave on high for 2 minutes. Add this sago to the kheer and cook the kheer on low flame for 10 more minutes. Garnish with fried cashews and serve warm or chilled.
