Sambhar Idli - Hotel Style !!

Preparation Time : 15  Minutes
Cooking Time : 20 Minutes
Serves : 2

Ingredients :

Idly Batter - to make 20 mini idli
Shallots - 10 no.s
Brinjal - 1
Ladies finger - 1
Drumstick - 1
Toor Dal - 1.5 cups
Tamarind Pulp - 1 cup
Sambhar Powder - 2.5 teaspoons (i used aachi sambar masala)
Turmeric Powder - 1 teaspoon
Salt
Clarified Butter / Ghee - 1 tablespoon

For Seasoning :

Mustard - 1 teaspoon
Urad Dal - 1 teaspoon
Fenugreek - 1 teaspoon
Asafoedita - a pinch
Green Chilly - 2 - Slit
Curry leaves - 10 leaves
Oil - 2 tablespoon

For Garnishing:

Coriander - finely chopped - 2 tablespoon
Onion - 1 medium sized - finely chopped



Method :

Peel shallots, cut all vegetables in to 2 inch long.and keep them aside. Pressure cook toor dal up to 3 whistles . Heat oil in a wok, add mustard, let it splutter then add urad dal, fenugreek, curry leaves and fry for 2 seconds, to this add the shallots ,the cut vegetables, sambhar powder,turmeric powder, green chilly and saute them for few minutes. Now add tamarind pulp along with a cup of water and let the vegetables cook well, once done, add the pressure cooked toor dal along with salt and let the sambhar boil for few more minutes. Add water if the sambhar consistency is thick.Turn off the gas once you get a nice aroma.

Steam the idlis, if mini idli mould is not available, you can make use of your normal idli moulds.

Take a bowl, add one sccop of sambhar, place few idli's and cover the idli's with sambar again and add a spoon of ghee. Finally garnish them with chopped coriander leaves and onion. Yummy hot sambhar idli is ready in a typical hotel style.

Spinach Kuzhi Paniyaram


Kuzhi paniyaram is one of my favourite dish when paired with the yummm tomato or pudhina chutney.Basically i prepare these paniyaram's instatly with left over idli batter. By now most of my fellow bloggers would know that i am a health freak and i peep deep in to the nutrition fact of each food i cook at home. So this time i have added spinach / palak to make the simple paniyaram a more healthier one !!!



Preparation Time : 10 Minutes
Cooking Time : 10 Mins
Serves : 2

Ingredients :

Left over Idli Batter : 3 cups
Spinach - 1 cup - finely chopped
Onion - 3/4 cup - Finely Chopped
Green Chilli - 2 - 3 or accordingly - Finely Chopped
Mustard - 1 tsp
Urad Dal - 1 teaspoon
Salt -a pinch if required (as there is already salt added in the idli batter )

Method :

Heat a teaspoon of oil in a tadka pan, add mustard, let it splutter, now add urad dal fry until golden brown. Finally add a pinch of asafoedita. Mix all the ingredients together along with the mustard tadka and mix well and keep it aside.
Now heat a paniyaram pan, grease it with little oil, pour a spoonful of the batter to the pan and cook covered on medium flame until it turns golden brown, similarly turn the other side and cook untill golden brown. Serve hot with any chutney of your choice.
This can be served as a snack or as breakfast !!

Mini Pizza Crackers



I always have cravings for Pizza flavour, so is my husband, we end up eating pizza atleast once in 15 days, while trying to satisfy our cravings, i came up with this quick snack option which is very ideal along with a hot cup of coffee or tea. The crunchy crackers with the soft veggies along with cheese is really a tempting snack. This can also be a finger food or snacks to fussy kids, unlike pizza its not junk. You have all the raw healthy veggies topped with cheese.Yumm yumm delicioso :)


Servings : 2
Preparation Time: 10 Minutes

Ingredients:

Crisply Salted Crackers - 10
Mixed Vegetebales - 1 Cup - Cut in to small cubes)
(Capscicum, onion, tomato,cabbage etc)
Grated Cheese - 1/2 cup
Pizza / Pasta Sauce - 2 tablespoon
Salt
Pepper




Method:

Mix vegetables and pizza sauce together with little salt and pepper. Place a tablespoon of it on a cracker, sprinkle grated cheese over it and place it in microwave for 2 to 3 seconds not more than that. Serve hot with beverage of your choice !!

Tip: Do not keep in the oven for more than 3 seconds as it will become soggy if kept for long.

Cabbage Pakora / Cabbage Fritters

A quick evening snack which can be made in minutes, especially when you have sudden guests. Also cabbage makes this to be little more healthy for fussy kids :)



Preparation Time : 10 Minutes
Cooking Time : 5 Minutes
Serves : 2

Ingredients:

Cabbage - 1 Cup - Sliced thin and long
Gram Flour / Besan - 1 cup
Green Chilli - 3 - Finely chopped
Coriander Leaves - 3 tablespoons - Finely chopped
Garlic - 3 cloves - sliced thin and long (optional )
Salt
Oil

Method :

Mix all the ingredients together except oil by sprinkling just 2 or 3 tablespoons of water. Make it in to thick dough or batter kind of. Heat oil on medium flame, once the oil is hot , scoop a spoonful of the batter in to the oil, deep fry until golden brown. Drain on absorbent paper and serve hot with any dip of your choice.

Tip: The mix should be flaky, it should neither be too watery nor hard.

Pizza on Toast

This is a wonderful dinner or even a heavy snack option, which not only kids all of us will love. I did not have a pizza base, but was craving for pizza and did not want to step out to have one, i could have dialed a pizza though, but wanted something homely too :D Was just staring at my refrigerator for few minutes which then secretly gave me this option ;) so lets hit this healthy yet simple and delicious pizzazzzzzzzzzzzzz !!!!





Preparation Time : 7 Minutes
Cooking Time : 10 Minutes
Servings : 2

Ingredients :

Whole Wheat Bread  - 6 Slices
Low Fat Cheese - 1 Cup - Finely Grated
Onion - 1 Medium - Chopped Medium Sized
Tomato - 1 Medium -Chopped Medium Sized
Capscicum - 1 Medium - Chopped Medium Sized
Mushroom - 2 tablespoons - Chopped Medium Sized
Basil Leaves - 2 tablespoons - Chopped Medium Sized
Pizza Sauce / Tomato Ketchup - 3 Tablespoons
Oregano - 1 tablespoon
Chili Flakes - 1 teaspoon
Salt



Method:

Sauté all the veggies along with basil leaves on high flame for a minute until they are half cooked and sprinkle salt. Toast all the bread moderately. Spread a toast with pizza sauce, then spread a layer of veggies, sprinkle some oregano, chili flakes and grated cheese. Microwave the toast on Medium high for few seconds until the cheese settles.Repeat the same for other toasts too. Serve hot with chilled ice tea !!!!

Tip: Alternatively you can also heat the toast on a tawa, on medium to low flame until cheese melts.

Sabudana Vada / Sago Fritters

This is a wonderful maharashtrian (Indian) snack made especially on a fasting day. Crisp and soft fritter are anytime welcome for a rainy day !!!! Am enjoying it with a cup of Masala Tea !!!! Lets see how to make this delicious evening snack  :)




Preparation Time : 1 hour
Cooking Time : 15 Minutes
Serves - 2

Ingredients

Sago / Sabudana - 3/4 cup
 Potato - 2 Medium Sized - Boiled and mashed
Roasted Peanuts - 1/2 cup - Ground coarsely
Green Chilli - 2 - Finely chopped chopped
Fresh Coriander Leaves - 2 tablespoons - finely
Lime Juice - 1/2 tablespoon
Salt
Oil

Method:

Soak Sago in enough water for an hour. Drain excess water. Mix it with all the other ingredients except oil. Divide it in to 8 balls, flatten between palms of your hand annd deep fry them in oil till golden brown. Drain and sever hot with chutney of your choice.

Paneer Pav Bhaji





Preparation - 30 minutes
Cooking Time 25 minutes
Servings - 4

Ingredients:

Paneer - 100 gms - cubed
Potatoes - 4medium sized
Tomatoes - 5 meduim sized
Cauliflower -  7-8 florets
Onions - 2 medium sized
Capscium/ Green bell peppers - 1 medium sized
Green Peas - 1/4 cup
Ginger Garlic Paste - 11/2 tablespoon
Green Chillies - 4
Fresh Coriander Leaves (finely chopped)- 4 tablespoons
Pav Bhaji Masala - 11/2 tablespoon
Lemons - 2
Oil - 3 tablespoon
Butter
Salt
Fresh Bread / Pav - 8 slices

Method :

Boil potatoes and peas. Peel the potatoes and keep them aside.Finely chop onion, tomatoes, capscicum, cauliflower and green chillies.Heat oil in a pan,add 3/4 th of the chopped onion and saute for a minute, then add ginger garlic paste, green chillies and saute for another minute. Now add half the chopped tomatoes and cook untill oil separates. Add Chopped capsicum,cauliflower  boiled and mashed peas and potato with one and half cups of water. Stir in between and keep the flame on low for 10 minutes, slowly mash the vegetables. Add pavbhaji masala, rest of the tomatoes, paneer and salt. Cook on low flame for 5 minutes. Garnish the bhaji with coriander leaves. Now toast the bread or pav in butter untill golden brown. Serve hot with bhaji along with butter, lemon and chopped onions sprinkled over them.

Pizza Pops

This is a crunchy pop with a sizzling cheesy veggies inside. You can use any vegetables that we use for making pizza. Meat lovers can also stuff chicken or meat of their choice. It comes with a great pizza flavor in bite sized pops :) Lets go ahead and relish them !!



Preparation time : 15 minutes
Cooking Time : 15 minutes
Servings: 2

Ingredients:

For the dough : 

All Purpose Flour / Whole wheat Flour - 1.5 cups
Salt 
Water 
( I used left over chapathi dough and it came out very well )

For the filling:

Pizza Sauce / Tomato Ketchup -2 tablespoon
Cheese Slice - 8 - Preferably small ones
Egg - 1 - Beaten Throughly
Bread Crumbs - 3 tablespoons
Onion - 1 medium Sized - sliced thin and long
Bell Peppers - 1 - sliced thin and long
Tomato - 1 medium sized - deseeded -sliced thin and long
Chili Flakes - 1 tablespoon
Oregano - 1 tablespoon
Salt
Oil



Method:

Mix flour,salt ,water and make it in to a soft dough. Divide them in to 8 equal balls. Roll them in to round circles. Now smear some pizza sauce or ketchup on the circles, place cheese and vegetables, sprinkle some salt,oregano and chili flakes. Roll the circle carefully and close both the ends by pressing the ends little hard. Make sure that the filling is less and the cheese does not come out while rolling, if you feel the cheese is large, cut it in to half and use. Now dip each of the prepared pops in egg, roll them on breadcrumbs and deep fry until golden brown on both sides !! Serve Hot immediately :)

Cabbage Dal Pakoda

I often make sprouted moon dal dosa, one evening it was raining and my hubby always loves to eat garam garam pakodas with a cup of masala chai, Am sure anyone would love this combination on a rainy day. So when i decided to make pakoras, i remembered that i had to sent an entry to priya's easy and tasty recipe's sprout event, i had left over moong dal dosa batter, to which i added few more ingredients which completed it to a lipsmacking pakoda. Here's the recipe.





Preparation Time: 20 Minutes
Cooking Time :10 Minutes
Servings :2 

Ingredients:

Sporuted Green gram / Moong Dal - 1/2 cup
Cabbage - Finely chopped - 2 tablespoon
Ginger garlic paste - 1 tablespoon
Green Chilli - 2 finely chopped
Coriander Leaves - 1 tablespoon
Gram Flour - 2 tablespoon
Rice flour - 2 tablespoon
Asafoedita
Salt
Oil for frying

Method:

Grind the sprouted moon dal to a fine paste, add rest of the ingredients except oil and make it in to a thick batter, the batter should not be thin. Heat oil in a frying pan, drop a spoonfull of the batter in the oil and deep fry them until golden brown on both the sides. Serve Hot with ketchup of your choice.

Green Tomato Kebab



Most of us dont use green raw tomatoes,they taste great too, instead they add more taste to few recipes.Here is the recipe for one such yummy snack or a starter.

Preparation time : 20 minutes
Cooking time : 10 minutes
Servings : 2

Ingredients

Green Tomatoes - 2 small finely chopped
(Remove the seeds as it will loosen the dough)
Cabbage -  2 tablespoon - finely chopped
Carrot - 2 tablespoon finely chopped
Green Chilli -2 finely chopped 
Fresh coriander leaves - 2 tablespoons - finely chopped
Garam Masala - 1 teaspoon
All purpose flour - 1/2 cup
Salt
Oil for frying

Method:

Mix all the ingredients together along with little water and make it to a soft dough. Roll them in to any shape of your choice, Now heat sufficient oil in a kadai , deep fry the rolls in oil until golden brown. Drain on a absorbent paper and serve hot with tomato ketchup

Tip: Do not add too much of flour as it will make the kebab hard.

Crispy Plantain Fritters / Vazhakai Bhajji




Preparation TIme : 10 minutes
Cooking Time: 10 minutes
Servings : 2


Ingredients

Plantain - 2
Besan Flour / All purpose flour - 1 cup
Red Chili powder - 1 teaspoon
Bread Crumbs - half cup
Salt - to taste
Oil - for frying

Method:

Wash and peel the plantain skin. Slice plantain vertically in to thin pieces.Keep it aside.Make a 
batter of flour with salt, red chili powder and water. Heat oil in a frying pan, dip each plantain slice in the batter and the roll them on the bread crumbs. Deep fry them until golden brown. Serve hot with ketchup.

 Stuffed paneer pakroa was a accidental innovation, i had paneer at home and was planing to make pakora but wanted to try something new, so was thinking of making a stuffed pakora. While thinking of  the ingredients,i simply used what ever i found in my kitchen and it turned out to be yum. Here's the recipe.
