Semolina Upma used to be our breakfast many times rite from my school days. Mom prepared it almost every other day. Me and my sister used to make some or the other stories just to avoid our break fast that day. I always used to ask my mom, if there was nothing else on the earth to prepare for breakfast. Now as a wife and mother, i just realize as how easy is to make this upma for breakfast and have started liking it too :) Am sure my mom is going to question me big time when she reads this. Few things can be learnt only by experience. Isn't It !!!

Servings : 2
Ingredients :
Semolina / Rava - 1 cup
Onion - 1 medium
Carrot - Finely chopped - 2 tablespoons
Beans - 2 tablespoons
Green peas - 2 tablespoons
Green Chilli - 2 - slit
Coriander leaves - Finely chopped - 1 tablespoon
Mustard seeds - 1 teaspoon
Urad dal - 1 teaspoon
Asafoedita - a pinch
Salt - to taste
Oil - 1 tablespoon
Clarified butter - 1 teaspoon
Water - 2 1/4 cups
Method :
Heat a pan and dry roast semolina on a medium flame for 2 minutes. Keep it aside. Heat oil in a pan, add mustard let it splutter, then add urad dal fry until golden brown, now add onions saute for a minute, add green chilli, vegetables and saute them again for two minitues. Add Water, Salt, and asafoedita, add the roasted semolina once the water starts boiling.Cook on low flame ,stir occasionally until all water is absorbed.Smear a teaspoon of clarified butter and garnish with coriander leaves. Serve hot.
Tip : You can also include tomatoes, potatoes or any other vegetable of your choice. Fried cashews can also be garnished for more taste.
