Vermicelli Upma / Semiya Upma

This dish in particular has been my favourite since my childhood. My mom always used to make this for breakfast. Its so easy to just hog it at once on a busy day especially when i get late on those exam days !! Now my daughter too loves it, she is even ok to eat it everyday :)



Preparation time : 10 minutes
Cooking Time : 10 minutes
Servings : 2

Ingredients :

Vermicelli - 2 cups
Onion - 1 medium
Carrot - Finely chopped - 1/2 cup
Beans - 1/2 cup
Green peas - 2 tablespoons 
Green Chilli - 1
Coriander leaves - Finely chopped - 1 tablespoon
Mustard - 1 teaspoon
Urad dal - 1 teaspoon
Hing / Asafoedita - a pinch
Salt - to taste
Oil - 1 tablespoon
Water - 21/2 cups


 

Method :

Heat a pan and roast the vermicelli on a medium flame for 2 minutes. Keep it aside. Heat oil in a pan, add mustard let  it splutter, then add urad dal fry until golden brown, now add onions saute for a minute, add green chilli, vegetables and saute them again for two minitues. Add Water, Salt, and asafoedita, add the vermicelli once the water starts boiling.Cook on low flame ,stir occasionally until all water is absorbed.Garnish with coriander leaves. Serve hot.
