This is a easy and a very healthy breakfast recipe, learnt it from my filipino friend, they use ham and cheese, being a veggie i tried my veg version. It came out very very well, it took me hardly few minutes to prepare this. As you all know i always rely on quick and easy cooking, this is one such quick recipe for a quick breakfast :) Am sure fussy eaters would love them too !!!
Preparation Time : 5 Minutes
Cooking Time : 4 Minutes
Bread - 2 Slices
Egg - 2
Tomato Ketchup - 1 teaspoon
Green Bell Pepper - 1 tablespoon - finely chopped
Onion - 1 tablespoon - finely chopped
Tomato - 1 tablespoon - finely chopped
Cheese - 1 tablespoon - grated
Spread tomato ketchup slightly on each bread, take a empty tablespoon and press centre of the bread gently to make a shallow,sprinke some mixed vegetables all over leaving the shallow part.Similarly sprinke grated cheese, now break open a egg gently on the shallow part of the bread and keep it in the microwave oven for 2 minutes or until the egg is cooked. Sprinkle some salt and pepper and serve hot !!
Tip: Do not bake it longer as the egg will become hard to eat. Can make this without cheese also.
